Abstract

This Doctoral Thesis entitled "Influence of the seasoning of oak casks on the organoleptic characteristics of Brandies de Jerez", aimed at obtaining the International and Industrial mentions has been carried out in the company Bodegas Fundador, S.L.U. and the University of Cadiz. Brandy de Jerez is a spirit drink with an alcoholic strength between 36 ? 45% vol., made from spirits and wine distillates and aged in a Criaderas y Solera system, which consists of oak casks previously seasoned with Sherry wines. Currently, there are few references in the literature on the production of this brandy and the processes involved, such as the seasoning of oak casks for the production of Sherry Cask®, with minimum seasoning times determined empirically. For this reason, the objective of this Doctoral Thesis was to study the influence of different variables (seasoning time, type of wine, type of wood of the cask, etc.) in the process of seasoning oak cask in order to determine how the factors arise, on the one hand, from the organoleptic characteristics of the Brandies de Jerez aged in them and, on the other hand, from the casks themselves as a product of commercial interest (Sherry Cask®), in addition to studying of other variables not related to the seasoning but to the aging of this beverage. To this end, a series of industrial-scale experiments were carried out, examining numerous variables that not only shed light on how the length of time a cask is seasoned affects the production of the Sherry Cask®, but also provide information on modulating the characteristics of aged brandies. All the knowledge obtained from the in-depth study of the wine used to season the casks, the wood itself, the wines destined for distillation and the spirits, as well as the process of seasoning the oak casks with Sherry wines for the production of the Brandy de Jerez or as a product of commercial interest, Sherry Cask®, a registered trademark that gives its name to the seasoned casks, and the impact of all this on the physicochemical and sensory characteristics of Brandies de Jerez. The relevance of the extracted information has been revealed through the application of different supervised and non-supervised chemometric techniques. The results obtained in this project have made it possible to deepen the knowledge of both the seasoning process and the aging process itself, and to determine the variables that can be modified and that are allowed in the specifications or technical instructions of the products in question, which are the most relevant in these processes. In this way, it is possible to control the production of Brandy de Jerez to obtain certain nuances and allow the development of new products with more controlled characteristics. It is therefore expected that the results of the project will maximize the yield and economic benefits of the production process of Brandy de Jerez.
